Pan roasted swordfish with charred tomato basmati rice, spinach, black bean- corn salsa and roasted red pepper coulis.

Dinner at the Rios wedding.
Pan seared Chicken in a Buerre sauce on a rather unique potato au gratin with asparagus, dried cherries, and squash. It was excellent.

Portobello salad
This is just me throwing ingredients together while they're still fresh. Pan seared portobello, feta, tomato, avocado, romaine, lemon and balsamic vinegar. The different textures really made this interesting although all the feta kind of sifted to the bottom making for a cheesy finish.

A little bit of Spain in Texas
I can't quite let go of my recent trip to Spain... fortunately. We brought back a paella pan the same as Mama Parrondo's and a bottle Valdepenas wine. Of course it didn't taste the same as mama's, but the effort was close enough to brighten the memories. The photo is before we removed it from the fire, so the yummy stock was absorbed to finish a luscious rice with rich flavors. Chicken, venison Sausage, Spanish chorizo, Shrimp and more yummy goodness with rice just crusted on the bottom.
