I tried the Cooks Illustrated modified version of Michael Bittman's
recipe in the NYT. Just waiting for it to cool…

      After realizing I really love eating, I decided that I should be able to cook stuff I really loved to eat. I also love the science behind the preparation of food, so I spend a lot of time learning about that.

      I read a lot of books, practice techniques all of the time, taste something new whenever I get a chance, and watch a lot of “Good Eats” episodes. :) Alton Brown might be kind of goofy, but his shows are full of solid food science.
